Eryngium humboldtii is a species of perennial herb in the family umbellifers. They have a self-supporting growth form. They are native to Paraná, Minas Gerais, SãO Paulo, Santa Catarina, Cerrado, Pampa, Rio Grande Do Sul, and Mata Atlântica. They have simple, broad leaves. Flowers are visited by Eurylomata speciosa, Calendyma chiliensis, Edwynia robusta, and Corynura lepida. Individuals can grow to 3.2 m.
